Instructions
Step 1
Preheat oven to 200 degrees. Make the chicken stock. Crush the garlic. Cut the pepper into 2cm chunks. Chop the chorizo.
Step 2
Fry the chorizo in a little oil for a few mins. Stir in the garlic, smoked paprika and rice and cook for 2 mins. Stir in the chicken stock, bring to the boil and then transfer to the oven for 20-25 mins.
Step 3
Zest and halve the lemon. Roughly chop the parsley (stalks too). Mix together half the parsley with all the zest and set aside.
Step 4
Fry the pepper on a high heat for 5 mins. Turn the heat to medium, add the prawns, season and cook for 5 mins. Once cooked, remove from heat and add a squeeze of lemon juice.
Step 5
Once the paella is cooked, remove from the oven and stir through the pepper, prawns and remaining parsley. Season and add a squeeze more lemon.
Step 6
I’m late up and garnish with the lemon zest and parsley.
