Spicy Sausage Tortellini

Instructions
Cook tortellini,
Step 1
Bring a large pot of salted water to a boil. Add the your choice of tortellini and cook according to the package instructions until they're al dente. Drain and set aside.
For the sauce,

In a large skillet, brown ground Italian sausage over medium low heat.
Step 3
Add the diced onion and sauté for a few minutes until it's translucent and slightly softened.
Step 4
Add the minced garlic, sautéing for another 30 seconds until fragrant.
Step 5
Add gochujang paste and saute for 1 minute. I used only 1 tbsp of gochujang but you can use more if you like it to be more spicy!
Step 6
Lower the heat and pour in the heavy cream, stirring to incorporate it into the sauce. Let it gently simmer for another 2-3 minutes until the sauce thickens slightly.
Step 7
Season with garlic powder, onion powder, italian seasonings and salt.
Step 8
Stir in the fresh baby spinach and let it wilt into the sauce. This should only take a couple of minutes. If you're using a large amount of spinach, you might need to add it in batches.
Step 9
Gradually add the grated Parmesan cheese and mozzarella cheese to the cream, stirring constantly to melt and incorporate the cheese into the sauce. Continue stirring until the sauce is smooth and creamy.
Step 10
Add the cooked tortellini to the skillet with the sauce. Gently toss to coat the tortellini in the sauce. If the sauce seems too thick, you can add a splash of pasta cooking water to loosen it up.
Step 11
Taste the dish and season with salt and pepper according to your preference. Serve the spicy sausage tortellini in bowls, garnished with grated Parmesan cheese and chopped fresh basil or parsley.
