Instructions

Step 1
Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Foil Packets: Cut four large pieces of aluminum foil, each about 12x12 inches. Place a piece of foil on a flat surface and lightly grease the center with cooking spray.

Layer Ingredients: In the center of each foil piece, place a portion of the thinly sliced beef. Top the beef with broccoli florets, bell peppers, zucchini, and sliced mushrooms.

Season and Sauce: In a small bowl, whisk together the minced garlic, low-sodium soy sauce, olive oil, dried thyme, salt, and black pepper. Drizzle this mixture evenly over each beef and vegetable stack.

Fold and Seal: Fold the foil over the beef and vegetables, covering them completely. Seal the edges of each foil packet tightly to prevent steam from escaping.

Bake: Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes or until the beef is cooked to your desired level of doneness and the vegetables are tender.

Serve: Carefully open the foil packets (they will release hot steam), and transfer the contents to serving plates. Garnish with fresh parsley if desired.
