Ingredients

For the Chicken Marinade:
1 poundboneless skinless chicken breasts
cut into bite-sized pieces
½ cupplain Greek yogurt
low-fat or non-fat
1 tablespoonolive oil
1 tablespoonlemon juice
2cloves garlic
minced
1 teaspoonfresh ginger
grated
1 teaspoonground cumin
1 teaspoonpaprika
½ teaspoonground turmeric
salt
to taste
black pepper
to taste
For the Curry Sauce:
1onion
finely chopped
2cloves garlic
minced
fresh ginger
1-inch piece, grated
1 x 14 ouncestomato sauce
can, choose a low-carb option
½ cupheavy cream
you can use a lower-fat alternative if preferred
2 tablespoonsolive oil
2 teaspoonsgaram masala
1 teaspoonground coriander
½ teaspoonground cumin
½ teaspoonturmeric
¼ teaspooncayenne pepper
adjust to taste

to taste
black pepper

Fresh cilantro leaves
for garnish, optional
Instructions
Marinate the Chicken:
Step 1
In a mixing bowl, combine the plain Greek yogurt, olive oil, lemon juice, minced garlic, grated ginger, ground cumin, paprika, ground turmeric, salt, and black pepper. Mix well.

Add the bite-sized chicken pieces to the yogurt mixture and toss to coat evenly. Allow the chicken to marinate while you prepare the curry sauce.
Prepare the Curry Sauce:

In a large skillet or saucepan, heat 2 tablespoons of olive oil over medium-high heat. Add the finely chopped onion and sauté for about 2-3 minutes until it becomes translucent.

Add the minced garlic and grated ginger to the skillet. Sauté for another minute until fragrant.

Sprinkle the garam masala, ground coriander, ground cumin, ground turmeric, cayenne pepper, salt, and black pepper into the skillet. Stir well to toast the spices for about 1-2 minutes.

Pour in the tomato sauce and heavy cream. Stir to combine all the ingredients. Simmer the sauce for about 5-7 minutes, allowing it to thicken.
Cook the Chicken:

While the sauce is simmering, heat a separate skillet over medium-high heat. Add the marinated chicken pieces (with the yogurt marinade) and cook for about 5-7 minutes or until the chicken is cooked through and slightly browned. The yogurt will help create a delicious, creamy coating on the chicken.
Combine Chicken and Sauce:

Once the chicken is cooked, add it to the simmering curry sauce. Stir to combine everything.

Taste the sauce and adjust the seasoning with salt, black pepper, or more cayenne pepper if you prefer extra heat.
