Instructions

Step 1
Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. In a medium bowl, combine potatoes, 3 tablespoons oil, garlic, salt, and pepper; toss until evenly coated. Place on baking sheet in a single layer.
Step 2
Roast for 20 minutes, toss, and continue to roast for 15 to 20 minutes more or until golden. Place potatoes on a serving platter, sprinkle with dill, basil, and chives. Break the cheese over the potatoes and drizzle lightly with oil. Serve immediately.
