Instructions

Step 1
Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
Step 2
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1-2 minutes until the garlic becomes fragrant but not browned.

Add the peeled and deveined shrimp to the skillet. Cook for about 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Step 5
In the same skillet, add the remaining 2 tablespoons of olive oil. Add the cooked pasta, fresh lemon juice, lemon zest, and chopped parsley. Toss everything together until the pasta is well coated.
Step 6
Return the cooked shrimp to the skillet and toss to combine with the pasta.
Step 7
Season with salt and pepper to taste. Adjust the level of red pepper flakes to your desired spiciness.
Step 8
Serve the Shrimp Scampi hot, garnished with grated dairy-free Parmesan cheese and fresh parsley if desired.
