Instructions

Step 1
Boil a pot of water and keep it boiling.
Step 2
Cut cod fillet into big chunks. Season with salt and white pepper powder, marinate for 10min. Wipe all moisture with kitchen towel and toss with corn starch.
Step 3
On medium heat, fry thinly sliced pork belly til golden brown. Set aside. Fry peppercorns and discard.
Step 4
With hot oil and on medium high heat, put fillets in. Fry one side quickly for 30 sec making it lightly golden. Put cooking wine and let evaporate. Put in ginger and green onion and put back pork belly.
Step 5
Turn heat to high. Put 5 cups of boiling water. Put tofu slices in. Keep on rolling boil on high/medium high for 5min, lid open. Put yondu.
Step 6
Then cover and continue boil on medium for 5min. Put the rest of seasoning and garnish 1 min before done.
