Instructions
Step 1
In a soup pot over medium heat, melt butter and olive oil
Step 2
Add celery, onion and carrots and sauté for about 3 minutes
Step 3
Add in minced garlic, seasonings and Herbamare/salt then sauté for another minute
Step 4
Sprinkle flour over the veggies and cook for about 2 more minutes
Step 5
Pour in broth and the chopped broccoli
Step 6
Cover and simmer on low, stirring every 5 minutes to prevent burning, for 35ish minutes, or until the broccoli and carrots are tender
Step 7
Once the vegetables are tender, remove from heat and slowly stir in cheddar then cream
Step 8
Taste and add more salt as needed
