for frying any oil will work depends on how dark or light you want your shields
4eggs

3 cupsMatzo meal
1 cupsgranular sugar
mixed together
1 cupbrown sugar
Powder sugar
jelly, chocolate syrup to make it not look it was a burger bun ore cook
baby carrots
old Latke trick to make sure oil doesnt scorch Not mandatory
Instructions
Step 1
On med heat but hot enough to hear sizzle. Pour enough oil that just covers the baby carrot. I used the left over Latke oil that was still hot and clean. The baby carrorts will avoid scorching the oil. Replace as the carrot gets black be careful of splatter when you replace carrot dry well before dropping into oil. Scorched oil will ruin any dish.

Step 2
Take two mixing bowls and a plate
Step 3
Fill one mixing bowl with whipped eggs so it's yellow. I cheated and used liquid eggs which is kosher.
Step 4
Fill one mixing bowl with matzo meal, white sugar and brown sugar. Make sure ingredients are mixed together.
Step 5
Dredge buns in egg wash both sides but not too long to avoid falling apart.
Step 6
Dredge buns in matzo meal white sugar and brown sugar mix. It will coat well. If not repeat step one more time.
Step 7
Place on plate so you can bring over to frying pan.
Step 8
Drop a bit of the egg mix make sure sizzels if yes. Drop 4 buns max so the fry heat doesn't go down.
Step 9
Set kitchen timer to 2 mins flip after two mins. To get that golden brown Latke looking color.
Step 10
Take a colander put paper towel, drop buns to drain off oil
Step 11
After Macabee shields are not scorching to touch. Place on serving plate and snow on powdered sugar. You know you got it right when you don't taste the bread much and it's taste more like cake. I cut in half so you can dip arrange on plate and make sure you see the yellow color from the egg wash.
