1 tablespoonolive oil
1onion
diced
2carrots
diced
2celery stalks
diced
1clove garlic

4 cupslow-sodium chicken broth
or vegetable broth for vegan option
24 ouncesboneless skinless chicken breasts
trimmed and cut into bite-sized pieces
15 ouncesdiced tomatoes
undrained
15 ouncescan kidney beans
drained and rinsed
1 cupfrozen corn
½ cupfresh kale
chopped, or spinach
½ teaspoondried thyme
¼ teaspoondried rosemary
salt
to taste
pepper
to taste
fresh parsley
Chopped, or cilantro, for garnish, optional
Instructions
Step 1
Prep and brown: Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery, and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
Step 2
Slow cooker time: Transfer the veggie mixture to your slow cooker. Add chicken broth, chicken pieces, diced tomatoes, kidney beans, corn, kale or spinach, thyme, rosemary, salt, and pepper. Stir to combine.
Step 3
Set and forget: Cover and cook on low for 4 hours, or until the chicken is cooked through and tender.
Step 4
Shred and serve: Remove the chicken pieces from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker and stir to combine.
Step 5
Finishing touches: Adjust seasonings with salt and pepper to taste. Garnish with chopped fresh parsley or cilantro (optional) and serve warm with crusty bread for dipping.
