Instructions

Step 1
Marinate chicken. Place chicken breast in large ziplock bag. Add oil, rosemary, salt, pepper and the water from the artichoke can. Pound with rolling pin to flatten and tenderize.
Step 2
Place cubed potatoes in a microwave safe bowl. Add 1/2 cup of water and seal with cling wrap. Microwave five minutes, or until almost tender. Drain water and spread onto lightly oiled sheet pan.
Step 3
Combine chopped artichoke, mayo, Parmesan and rosemary in a bowl. Set aside.
Step 4
Grill chicken and place on sheet pan with the potatoes. Top chicken with artichoke topping.
Step 5
Sprinkle on extra Parmesan and rosemary
Step 6
Bake for 15-20 minutes. 350
