Goan Pork Vindaloo
Serve with ciabatta bread, buttered and warmed lightly in oven.

For Vindaloo Curry
Instructions
Step 1
Remove skin, chop meat into cubes and marinate overnight
Step 2
In a deep pan, saute the onions with oil until brown. High, then reduce to medium.
Step 3
Add marinated cubed pork, fry for 10 minutes on medium.
Step 4
Add vinegar, meat masala, hot chilli powder, sugar, salt, tomatoes and 500 mL hot water. Add tandoori colour (1/4 tsp) at edge of dish, away from meat, and gently mix into curry.
Step 5
When bubbles appear, stir then place lid. Simmer for 40 mins closed.
Step 6
After 40 mins, remove lid, stir and cook open for 10 mins
Step 7
Let it cool on the stove-top, without the lid.
