32 ozPasta Sauce
16 ozRicotta cheese
4green chilis
4 clovesgarlic
1 cupcilantro
1 bunchscallions
Basil leaves

Instructions
Step 1
1. Boil 12-15 lasagna sheets. Drain & place back in the pot with more water to keep it from sticking.

*RICOTTA MIX:
Step 3
-In a food processor, blend ricotta, chilis, garlic, cilantro, scallions, garlic & onion powder.

*SPINACH FILLING:
Step 5
-Heat 2 tbsp oil, add garlic & saute
Step 6
-Add in onions & bell peppers & cook until soft
Step 7
-Mix in the bag of spinach in handfuls. Add Italian seasoning, crushed red pepper & sauté until spinach is completely soft.

*SAUCE:

-Empty your choice of jarred pasta sauce into a large bowl & mix one big spoon of the ricotta in.

*ASSEMBLY:

-Lay out lasagna sheets & let them dry or pat them dry so the mixture doesn’t slide off.
Step 12
-Ladle a few big spoonfuls of sauce on the bottom of a 9x13” baking tray & set aside.
Step 13
-Start by spreading about two spoonfuls of the ricotta mix on each lasagna sheet (leaving about an inch of space on the end & sprinkle with a handful of mozzarella cheese).
Step 14
-Spread about two spoonfuls of spinach mix on top, top with a spoonful of sauce (evenly spread) & a generous sprinkle of mozzarella cheese
Step 15
-Roll the lasagna up & place in a baking sheet w/ the flap side facing down. Repeat until you’ve used all of the ingredients.
Step 16
-Pour sauce all over, top with a few handfuls of mozzarella cheese & bake covered at 350 for about 10 minutes!
