Ingredients

6 servings

200g mixed wholegrains eg brown rice

6 tsp garlic puree

2 heaped tbsp coriander

1 pack baby carrots

Cherry tomatoes

Soft boiled eggs

soft boiled
Munch seeds
omega variety

Pickled red onion

Instructions

Step 1
Pickle the red onion with apple cider vinegars, brown sugar, cloves, star anise and cumin seeds
Step 2
Cook the lentils and the grains in the veg stock
Step 3
Brown the onions in olive oil
Step 4
Add the garlic, ginger and spices and cook through
Step 5
Chop the vegetables and add to the grains until cooked
Step 6
Mix everything together in the pan and season to taste
Step 7
Soft boil eggs for each person (5 mins in boiling water)
Step 8
Serve on a bed of spinach and garnish with the pickled onions, seeds, cherry tomatoes and eggs
