Instructions

Step 1
Preheat oven to 425 F (218 C). Place the butter in a 10-inch cast iron skillet and place in the oven to melt (don't forget it or it will burn!).
Step 2
Put the milk, flour, eggs, salt, cinnamon, and vanilla in a blender pitcher (you can also do this in a bowl with a whisk). Blend until smooth.
Step 3
Pour the batter over the melted butter in the skillet. Arrange the peach slices on top. Bake in preheated oven for 15 to 20 minutes, or until golden brown. Serve hot with lots of butter and a drizzle of maple syrup or a sprinkle of powdered sugar.
