Ingredients

1 tablespoonolive oil
1onion

2cloves garlic
minced
1 teaspoonground ginger
½ teaspoonturmeric
¼ teaspooncinnamon
¼ teaspooncayenne pepper

trimmed and cut into bite-sized pieces
1 cupchicken broth
low-sodium
½ cupdried apricots
halved
¼ cupraisins
¼ cupchopped almonds

1 tablespoonfresh cilantro
chopped
1 cupcouscous
1 ½ cupswater

Instructions
Step 1
Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic, ginger, turmeric, cinnamon, and cayenne pepper (if using). Cook for 30 seconds until fragrant.
Step 2
Add chicken and cook until browned on all sides, about 5 minutes. Pour in chicken broth, apricots, and raisins. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through.
Step 3
While chicken simmers, prepare couscous according to package instructions, using boiling water instead of broth.
Step 4
Stir almonds (if using) into the chicken tagine and cook for 1 minute. Remove from heat and stir in cilantro.
Step 5
Serve chicken tagine over couscous.
