Instructions

Step 1
Thinly slice the jalapeño into rounds, removing ribs and seeds. In a small bowl, combine sliced jalapeño and juice from the lime. Season with salt and pepper; set aside to quick-pickle

Mix garlic powder, cumin, and chili powder. Place ¼ cup flour in a shallow dish. Crack 1 egg into a second shallow dish; add 2 TBSP water and beat with a fork to combine. Place panko and half of the seasoning mix in a third shallow dish. Season all three dishes generously with salt and pepper.
Step 3
Pat chicken dry with paper towels and season all over with salt and pepper. Press chicken into flour until fully coated. Shake off excess, then dip both sides into beaten egg. Let excess egg drip off, then press into seasoned panko until fully coated.
Step 4
Heat a ¼-inch layer of oil in a large pan over medium-high heat. Cook until chicken is golden brown and cooked through, 4-5 minutes per side.

Combine mayonnaise, remaining seasoning mix, and ketchup

Spread mayonnaise on a toasted bun and top with pickled jalapeños
