Instructions
Step 1
1) Peel and slice garlic
2) Heat olive oil in a small skillet on simmer
3) Add garlic and crushed red pepper to skillet and let cook covered, on simmer, for 5 to 10 minutes until softened. Be careful not to let it brown or burn.
4) In a food processor, blend the beans, cottage cheese, garlic and olive oil mixture with 1/2 the lemon juice until smooth. Add additional lemon juice and olive oil, if needed, for the texture you prefer. Mix in the cumin, if used. Add salt and pepper to taste.
5) Enjoy!
