Instructions
Step 1
Place steak in large marinating dish.
Step 2
Combine sherry, egg white and cornstarch, stir until smooth.
Step 3
Stir in 2 Tbsp of oil.
Step 4
Pour the egg white mixture over the steak, coating both sides thoroughly and marinate for 1-2 hours.
Step 5
Combine remaining oil, soy sauce, onions, orange peel, ginger, sugar and cayenne pepper for basting sauce. (adjust to taste)
Step 6
Divide sauce equally between two cups and set one aside
Step 7
Grill steak over medium heat, turning and basting with sauce.
Step 8
Cook to desired doneness.
Step 9
Remove steak and slice diagonally across the grain into 1" strips.
Step 10
Heat reserved sauce (microwave is easiest)
Step 11
Top steak with heated sauce and serve.
