Creamy Cajun chicken and sweet potatoes 🥘🍠 Hit save 📌 for your next easy recipe and follow for more recipes like this Recipe (serves 3) Recipe Ingredients for the chicken marinade 500g chicken mini fillets, uncooked 3 tbsp Cajun seasoning 1 tbsp olive oil In a bowl combine all ingredients and then rub the marinade all over the chicken fillets. Bake, air fry or pan fry until chicken is fully cooked. Once slightly cooled down cut into bite size pieces. Ingredients for the sweet potatoes 4 large sweet potatoes, peeled and cut into pieces 1 tbsp cooking oil 2 tsp cornstarch 1 tsp black pepper 2 tsp sweet paprika Salt Add the potatoes to a roasting tray, add the seasonings and cooking oil, combine well and bake or air fry for about 20 minutes. Ingredients for the creamy Cajun sauce 1 large onion, chopped 4 garlic cloves, chopped 1/2 pack of baby spinach 1 1/2 tbsp Philadelphia original soft cheese 2 tbsp tomato puree 100ml water 1/2 vegetable stock cube 4 tsp Cajun seasoning Black pepper and salt 1 tbsp olive oil Grated cheese (I used mix of cheddar and mozzarella) Heat olive oil in a pan, add the chopped onion, sauté for 2-3 min, add the chopped garlic, tomato pure and seasonings,combine, add the vegetable stock cube, water, soft cheese and combine again, simmer for 3-5 min, add the baby spinach, cooked chicken and 20g of grated cheddar, combine. In a baking dish layer the roasted sweet potatoes, following the creamy Cajun chicken,and finish with some grated cheese. Place under the grill or bake on 180C until the cheese has melted. Instructions

Step 1
