Airfryer Chicken Katsu Curry

“Most of us have had that katsu curry at that popular restaurant chain, but here is my version which you can make at home. This is perfect for during the week or even at the weekend so you don’t need to order in – and it will save you some money. I love this with sweet potato but you can also make it with chicken. Instructions

Step 1
First make the sauce. Spray the pan with a low-calorie oil and soften the onion and carrot in a pan over a medium heat, then add the remaining ingredients and let this simmer for 15 minutes. Blitz the sauce with a handheld blender until smooth. (If you prefer not to blitz the sauce, just don’t add a carrot to it)
Step 2
Put the flour, egg and breadcrumbs into three separate bowls. Flatten the chicken and then coat chicken in the flour, then in the beaten egg, shaking off any excess, then roll in the panko breadcrumbs.
Step 3
Spray with low-calorie oil spray and air-fry at 190°C for 15 minutes.
Step 4
Serve with rice!
