2 poundground beef
2 cupswater
1 x 1.25 ouncetaco seasoning

drained and rinsed
2 cupscorn kernels
frozen, canned or roasted
2 cupsshredded cheddar cheese
1 cupshredded monterey jack cheese
2roma tomatoes

2green onions
½ cupfresh cilantro leaves
24 slicesjalapeños

Instructions
Step 1
Preheat oven to 400 degrees F.
Step 2
Wrap parchment paper around baking sheet and place a few layers of tortilla chips across the sheet
Step 3
Drain black beans and corn by slightly opening can of both and draining the excess liquid out
Step 4
Grate both cheeses onto 2 sheets of paper towel
Step 5
Take tomatoes and dice them into small cubes
Step 6
Chop really thin slices of green onion. Rinse cilantro and pat dry with paper towel and chop leaves finely
Step 7
Take out slices of jalapeño from jar
Step 8
Put ground beef in large skillet over medium high heat, once all cooked and brown, no pink, drain excess fat with collinder
Step 9
Stir in water and taco seasoning mix into beef, bring to a boil
Step 10
Reduce heat to low medium to simmer beef and stir occasionally for 5-10 minutes
Step 11
Top tortilla chips with ground beef mixture, black beans, corn, tomatoes, jalapeños and cheeses in that order
Step 12
Place into oven and bake until heated through and the cheeses have melted, about 7 minutes
Step 13
Top with green onion and cilantro. Use spatula to serve with a side of sour cream
