Ingredients

3 Tbspsoy sauce
dark or light
3 Tbsphoney
2garlic cloves
peeled and crushed
root ginger
5 c m piece, peeled and finely grated
½ tspsriracha sauce
8chicken thighs
bone-in, skin and all visible fat removed
1 Tbspsesame seeds

Instructions
Step 1
Add the soy sauce, honey, garlic, ginger and sriracha sauce to a small mixing bowl and stir to combine
Step 2
Place the chicken thighs in an ovenproof dish and pour over the honey and soy sauce mix.
Step 3
Cover with cling film and allow to marinate for at least 1 hour in the fridge, Preheat the oven to 220°C (fan 200°C/gas mark 7) then pop the chicken thighs in the oven and cook for 15 minutes.
Step 4
After 15 minutes, turn the chicken thighs over so that the meat doesn't dry out. Cook for a further 15 minutes.
Step 5
Again, turn the chicken over and cook for another 15 minutes. The sauce on the chicken thighs should have reduced and started to become sticky.
Step 6
If using the sesame seeds, add to a frying pan and heat over a medium heat for a few minutes until lightly golden. Leave to one side.
Step 7
Remove from the oven and check that the chicken thighs are cooked through and that no pinkness remains
Step 8
Sprinkle over the toasted sesame seeds and serve with your choice of accompaniment
Step 9
Serve with basmati rice or your choice of accompaniment.
