Instructions
Step 1
Make cheesecake filling: using an electric or stand mixer, mix together cream cheese, powdered sugar, and vanilla extract.
Step 2
Line a tray with parchment paper, scoop 12 tbsp sized dollops of cheesecake filling onto tray.
Step 3
Place tray in freezer for 2 hours, making sure cheesecake filling is fully frozen.
Step 4
Cookies: Cream together butter, brown sugar, and sugar.
Step 5
Mix in egg, egg yolk, and vanilla extract.
Step 6
Fold in flour, cocoa powder, baking soda, and salt.
Step 7
Mix in crushed oreos.
Step 8
Place dough in fridge and preheat oven to 350.
Step 9
Once the oven is ready, take the dough and cheesecake mixture out. Using a 2oz cookie scoop, scoop the dough. Create a well in the center of the dough using your finger, and place a blob of cheesecake mix inside. Cover it up with more dough and place on a lined cookie sheet.
Step 10
Bake at 350 for 12-14 minutes.
