Instructions

Prepare the Green Beans:

Step 1
Wash the green beans thoroughly and trim off the ends. If the beans are very long, you can cut them in half.

Blanch the Green Beans:

Bring a pot of water to a boil and add a pinch of salt.

Add the green beans and blanch for 2-3 minutes until they are bright green and slightly tender but still crisp.

Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. This helps maintain their vibrant color. Drain again and set aside.

Sauté the Green Beans:

In a large skillet, heat the olive oil or butter over medium-high heat.

Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

Add the drained green beans to the skillet and toss to coat in the garlic and oil.

Cook for about 5-7 minutes, stirring occasionally, until the beans are tender and have a slight char.

Season with salt and pepper to taste. If using soy sauce, add it now and toss the beans to coat evenly.

Finish and Serve:

If desired, add a squeeze of lemon juice for a fresh, tangy flavor.

Transfer the sautéed green beans to a serving dish.
