Ingredients

2malanga roots
large, peeled and cut into chunks
1 tspsalt
4 cupswater
1 cupcoconut
grated, fresh or desiccated
1 Tbspcoconut oil
1 sprigcurry leaves
optional
1green chilies
finely chopped, optional
salt
to taste
Instructions
Boil Malanga Roots:
Step 1
In a large pot, bring 4 cups of water to a boil.
Step 2
Add 1 tsp salt and the malanga root chunks to the boiling water.
Step 3
Cook until the malanga is tender but not mushy, about 20-25 minutes.
Step 4
Drain the malanga roots and set aside.
Prepare Coconut Mixture:
Step 5
In a large mixing bowl, combine the grated coconut, coconut oil, curry leaves, and green chilies (if using).
Step 6
Mix well to combine all the ingredients.
Combine Malanga and Coconut:
Step 7
Add the cooked malanga chunks to the coconut mixture.
Step 8
Gently mix to coat the malanga with the coconut and other ingredients.
Step 9
Adjust salt to taste.
Serve
Step 10
Serve warm as a side dish with rice, curry, or any other meal.
