Instructions

Step 1
Preheat the oven to 450 degrees F. Use a fork to pierce the eggplant all over so it doesn't explode while roasting. Wrap the eggplant and garlic separately in foil and place them on a baking sheet. Roast for 30-45 minutes.
Step 2
Allow the roasted eggplant and garlic to cool slightly, then remove from the foil. Use a spoon to scoop out the eggplant pulp and some of the liquid into a bowl. Discard the skins. Allow the eggplant and garlic to cool to room temperature.
Step 3
Add the tahini, lime juice, cumin, salt, pepper, cayenne or paprika, and/or olive oil
Step 4
Drizzle with olive oil and garnish with parsley before serving
Step 5
Will keep in an airtight container in the fridge for up to 4 days
