Instructions

Step 1
Preheat the oven to 350 degrees F.

Chop the squash and onion, then boil in salted water until tender, approximately 7-10 minutes.

In a separate bowl, beat eggs and add cheese. Combine it with the drained squash and onion mixture.

Butter a casserole dish and add the squash mixture.

Mix the Ritz crackers and the melted butter. Sprinkle this as a layer on top of the squash.

Bake for 25 minutes until the top is golden brown.
