Make ASAP: batter deflates the longer it sits and the more you mix. Substitute for buttermilk: same amount of the milk of choice + 4tbsp of vinegar. Stir to combine and let sit for 5min to curdle slightly, resembling buttermilk. Makes a large batch of pancakes so prepare to freeze if necessary.

Instructions

Step 1
Melt butter in a saucepan over low heat.

In a large bowl, whisk to combine: flour, salt, sugar, baking soda, and baking powder.

In a smaller, but still large bowl, whisk to combine: buttermilk and eggs.
Step 4
Pour the wet mixture into the dry mixture and fold gently 10 times.
Step 5
Stream in half of the melted butter and fold 6 more times.
Step 6
Add in the rest of the butter and fold for another 20 seconds. You want lumps.
Step 7
Batter should be thick and scoopable like a more malleable cookie dough.
Step 8
Place a skillet over medium-low heat.
Step 9
Cook 1/2 cup scoops without fat for 3 minutes per side.
