Cajun Salmon & Broccoli Pasta

Instructions

Step 1
Place the salmon fillets down on a plate skin side facing up and slowly pour boiling water over the skin. You should be able to see it visibly shrink on top of the salmon.
Step 2
Wait a minute and then pull the skin off easily from the salmon. Drain the water and fully pat dry the salmon fillets.
Step 3
Season both sides of the salmon with salt and pepper and then place into a hot frying pan sprayed with cooking spray.
Step 4
Fry on one side for 2 mins and then flip. It should be nice and golden brown and some of the fatty juices should have released in the pan.
Step 5
Fry for a further 2 mins on the other side and then use a spatula to slice down into the salmon fillets and break them apart in the pan. They should still be raw in the middle which is fine.
Step 6
Fully break them apart into salmon chunks / flakes and then add in the Cajun and garlic seasoning and continue to stir and fry and fully cook the salmon for another few mins.
Step 7
Remove the salmon from the pan and set aside on a plate for later.
Step 8
Slice your onion into thin strips, cherry tomatoes and half and dice your garlic. Add the onions and tomatoes into the pan and stir and fry for around 5 mins to soften.
Step 9
Season with 1/4 tsp of salt and pepper and after the 5 mins add the diced garlic and fry for a further minute.
Step 10
Bring salted water to boil and add your pasta for 8 mins and then drain reserving some of the pasta water.
Step 11
Now transfer the onion, tomatoes and garlic mixture into a blender along with the light cream cheese and low fat milk to make a creamy sauce (I used almond milk).
Step 12
Blend until smooth and then add back to the same frying pan.
Step 13
Slice up your broccoli into small florets and add into the pan with the sauce and bring to a simmer and reduce the heat to medium.
Step 14
Take some of the reserved pasta water and add into the pan with the sauce and broccoli and add the 1/2 tsp of Cajun, garlic and Italian mixed herbs.
Step 15
Stir everything together and allow to simmer until the broccoli is fork tender (about 10 mins).
Step 16
Add the salmon flakes back into the pasta along with the fresh parsley and lemon juice and stir together before finally adding the cooked pasta and giving everything a final stir together.
Step 17
Serve into four equal portions, enjoy.
