Instructions

Step 1
Pre-heat oven to 180ºC (356ºF).
Step 2
In a medium bowl, whisk the egg until fluffy. Whisk in the 0 calorie brown sugar until combined.

Add the yogurt, applesauce and vanilla and whisk again until well combined.
Step 4
Add the flour, baking powder and spiced and whisk to combine. Fold in the shredded carrot.
Step 5
Transfer the batter to a 9-inch loaf tin lined with parchment paper and bake for 45-55 minutes, checking every five minutes once it has been in the oven for 40. Cool on a cooling rack.
Step 6
Make the cream cheese glaze by mixing together the cream cheese, vanilla and 0 calorie powdered sugar until smooth.
Step 7
Allow the loaf to cool completely before adding the glaze and topping with crushed pecans.
Step 8
Slice and enjoy!
