Step 1
1. Preheat over to 425 convection, 450 bake 2. Pound the sh*t out of the chicken
3. Salt and pepper the chicken
4 Dredge in flour, then eggs, then bread crumb mixture
5. Spray a wire rack on a cookie or baking sheet. 6. Place chicken, single layered on the wire rack and spray the tops of the chicken. 7. Bake for 20-30 min or until internal temp reaches 165
8. While chicken cooks make salad. Mix arugula, shaved parm, cherry tomato, olive oil, red wine vinegar, lemon juice, and salt and pepper.
