Step 1
In a deep plate or serving bowl add the yoghurt, lemon zest and 1tbsp extra virgin olive oil. Mix well to make the base of the dish and put aside.

Step 2
In a small microwave safe bowl add the butter and 1/2 tbsp olive oil. Microwave for a few seconds to melt the butter, add the smoked paprika and mix well. Put to the side.

Step 3
Put the bread in the toaster and poach the eggs (you are looking for soft yolks). Place the poached eggs on top of the base yoghurt mix, drizzle the smoked paprika sauce on top, and serve with the toast. Enjoy!
