30 Minute - Chicken Supreme

This dish is high in calories, high in protein and makes for a hearty meal, serving 4 with large portion sizes. This was one of my favourite things to make at university after the gym, it's not the healthiest but it's delicious. Although usually it's fine to get cheap stock and vegetable seasoning, for this recipe I highly recommend using oxo cubes and kucharek vegetable seasoning as others don't taste anywhere near the same in this. Also do not use unsmoked bacon, a lot of the flavour in the cream sauce comes from the chicken stock and the smokey bacon, without it the flavour isn't anywhere near as bold.

Instructions

Preparation

Step 1
Finely dice the garlic and onion and then pan fry in olive oil till golden brown. Then put them in a small bowl.

Finely dice the bacon and then pan fry in olive oil till they're slightly crispy. Then put it in the small bowl.

Wash and then finely dice the mushrooms and then pan fry in olive oil for roughly 3-4 minutes. Then put them in the small bowl.

Roughly dice the chicken and lightly season with vegetable seasoning (preferably Kucharek) and pepper. Then pan fry till cooked through.

Measure out 300ml of boiling water in a measuring jug and add 1 oxo chicken stock cube.

Cooking

Step 6
Put rice in a pot, cover in boiling water (add more later if necessary) and bring to simmer then cover with lid.

Add everything from the small bowl, the chicken from the frying pan, both the cups of cream and the chicken stock into a wok, cook till cream is off white and thickens (roughly 10-15 mins)

Serving

Step 8
Plate up the rice and then use a ladel or similar to portion out the chicken supreme on top of the rice.
