Aunt Sue's Apple Cake

Super-moist, and not too sweet! A family favorite. This is also a great recipe to use up older apples.

Step 1
Preheat oven to 350°. Grease a 9x13 glass pan.
Step 2
Mix all dry ingredients together in a mixing bowl, until well-blended.

Add oil..... To make it healthier, put applesauce in the bottom of the measuring cup first, up to half of the recipe amount. Pour oil on top, measuring to the 3/4 cup line. Add to the mixing bowl; blend.
Step 4
Add eggs and vanilla; blend.
Step 5
Wash about 4 apples. Quarter them, and remove the cores. Grate into the large measuring cup used earlier. When the measuring cup is full (likely 2 apples, and halfway through grating), pause to dump the grated apple into the mixing bowl and blend well. This will prevent the apples from browning while finishing the grating step.
Step 6
Pour into prepared baking pan. Bake 50-60 minutes, until toothpick inserted into center comes out clean.
