Ingredients
6 servings
1 tablespoonsolive oil
1jalapeño
medium, seeded and chopped
1clove garlic
large, minced
1 teaspoonsfresh ginger
grated or minced
1 poundbrussels sprouts
trimmed and halved lengthwise, quartered if large
4 cupsbroccoli florets
bite-sized
2 ½ tablespoonslow-sodium soy sauce
or tamari
¼ teaspoonred pepper flakes
or more to taste
1 tablespoonshoney
1 tspground coriander
1 tspgarlic powder
salt
to taste
1 lbground beef
1 bunchgreen onions
thinly sliced, for garnish
½ cupbrown rice
cooked, for serving
Instructions
Step 1
Set a large nonstick skillet over medium heat. Add in the olive oil. When hot, add in the chopped jalapeño, garlic, and ginger, and cook until fragrant.
Step 2
Add in the brussels sprouts and cook for 4 minutes, so they start to brown, Sprinkle water in the pan to slightly steam and soften them.
Step 3
Add in the broccoli florets and continue to cook for about 5 to 8 minutes, until the veggies are all tender (but still have a touch of crispness).
Step 4
Add in soy sauce, honey, and red pepper flakes. Stir and then remove from the pan and set aside.
Step 5
Cook the beef in the pan until browned. Optionally, before cooking the beef, deglaze the pan with a splash of white cooking wine.
Step 6
Season the beef with coriander, garlic powder and salt.
Step 7
Add cooked vegetables back into the pan with the beef and mix everything together.
Step 8
Serve with cooked brown rice or other side dish.
