Instructions
Step 1
Mix all-purpose flour, almond flour, powdered sugar, salt, and vanilla sugar thoroughly. Crumble the butter into the mixture until it is completely uniform.
Step 2
Quickly bring the dough together with the egg, starting with just half of it, and add more as needed until the dough holds together without crumbling too much. Place the dough in the refrigerator for 30 minutes.
Step 3
Roll the dough out on a floured surface to about 3 mm thickness. Cut into suitable strips and place them on a baking tray lined with parchment paper.
Step 4
Bake in a preheated oven at 175°C (fan-forced) for about 10-15 minutes. Keep an eye on them and possibly rotate the tray halfway through. Let the cookies cool.
Step 5
Spread raspberry jam on one half of the cookies, place the other half on top, and cut into pieces.
Icing
Step 6
Whisk together a thick white icing using a hand mixer. Add a small amount of water at a time until the consistency is thick and smooth.
Step 7
Decorate the raspberry slices with icing and freeze-dried raspberries.
