Instructions

Step 1
In a medium saucepan, combine the rinsed freekeh and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the grains are tender and the liquid is absorbed. Stir occasionally.
Step 2
While the freekeh is cooking, prepare the edamame and corn. If using frozen edamame, steam or boil according to package instructions until heated through. If using fresh edamame, shell them and boil for about 3-5 minutes until tender. For the corn, if using fresh, you can steam it, or if using frozen or canned, simply heat it through.
Step 3
Once the freekeh is done cooking, fluff it with a fork and drizzle with olive oil. Season with salt and pepper to taste.
Step 4
In a large bowl, combine the cooked freekeh, edamame, corn, and diced cucumber. Add the pesto and mix well until everything is evenly coated.

Taste and adjust seasoning if necessary.

Serve the freekeh bowl warm or at room temperature.
