Instructions
Step 1
Rough chop vegetables
Sauté all vegetables and garlic (except mushrooms) in 2tbsp olive oil for 5-10 minutes
Step 2
Add seasoning and veggie stock and simmer for 20 minutes
Step 3
Add rice and mushrooms and simmer for 10-12 minutes or until rice is tender
Step 4
Add heavy cream, Parmesan, and kale and simmer for 3 minutes (if using frozen kale. Will need longer if using fresh)
Step 5
Serve
