Ingredients

Vodka Sauce
300gguanciale
finely diced
1onion
diced
3cloves garlic
minced
3 Tbspvodka
3 Tbsptomato paste
1 tspchili flakes
1 TbspCalabrian chilies
minced
400mltomato passata
ยฝ cupheavy cream
ยฝ cupparmesan
grated
salt
to taste
black pepper
to taste
400gpasta

Instructions
Step 1
Render the guanciale in a pot over low heat then remove once crispy.
Step 2
Add the onion and cook until translucent, about 3 min.
Step 3
Add the garlic and cook until fragrant, about 30 seconds.
Step 4
Add the tomato paste, Calabrian chillies, and chilli flakes. Cook until the paste darkens, about 1 min.
Step 5
Add the tomato passata, bring to a simmer, and add the vodka.
Step 6
Add the cream and parmesan.
Step 7
Season to taste with salt and black pepper.
Step 8
Cook your pasta of choice and add to the sauce with some pasta water.
Step 9
Place the pasta in an oven-safe dish and top with the guanciale and mozzarella.
Step 10
Place in a 400 F oven for 10-15 min until the cheese has melted and browned.
Step 11
Top with the pesto and crispy prosciutto.
