Wonton Noodle Soup

Instructions
Step 1
Prepare the Broth: In a small saucepan, combine chicken broth, scallion whites, ginger, Shaoxing wine, soy sauce, white pepper, and sesame oil. Simmer over medium heat.
Step 2
Cook the Noodles: In a large pot of boiling water, cook the fresh noodles for 30 seconds, then drain and transfer to serving bowls.
Step 3
Cook the Wontons: Add fresh or frozen wontons to the boiling water. Once they float, drain and place on top of the noodles.
Step 4
Blanch the Bok Choy: Add bok choy to the boiling water and blanch for 1 minute. Add to the bowls.
Step 5
Strain the Broth: Remove the ginger and scallion whites from the broth using a strainer. Pour the broth over the noodles, wontons, and bok choy.
Step 6
Serve: Garnish with chopped scallion greens and chili oil. Serve immediately.
