Instructions
Step 1
Add the oil to a large heavy bottomed saucepan on a medium/ high heat. Once the oil is hot add the lamb and fry until sealed. Remove a put to one side
Cast Iron Pot
Step 2
Add the onions to the pan with a pinch of salt. Gently sauté for 10 mins stirring occasionally
Step 3
Add the carrots, swede and leeks. Stir well and saute for a further 10 mins.
Step 4
Add the browned lamb plus any juices back into the pan and stir.
Step 5
Add enough warm veg stock to the pan to cover all the meat and veg. Increase the heat to bring the mixture to a boil.
Step 6
Reduce the cawl to a gentle simmer for 1-1.5 hours.
Step 7
Add the potatoes and simmer for a further 20 mins
Step 8
Season to taste and serve with sprinkled with chopped parsley and crusty bread
