Instructions
Step 1
Heat olive oil in a pan and sauté diced onion and crushed garlic until browned. Add the minced meat and cook until browned. Stir in taco seasoning, then mix in the black beans.
Step 2
Dice tomatoes, cucumbers, and Spanish onion. Drain the corn and combine everything in a bowl. Squeeze in some lime juice and mix well.
Step 3
Heat portions of cauliflower rice in the microwave. Serve with diced avocado, a side of salsa, a dollop of sour cream, and sliced jalapeños.
