Instructions

Step 1
Crack and beat the eggs, in a bowl with a tool of your choice. I used a fork.
Step 2
Add and stir finely chopped vegetables of your choice
Step 3
Add cracked black pepper, salt, and mirim
Step 4
Add 1 tsp of oil to a medium size non-stick pan and distribute the oil evenly using a napkin or paper towel. Preheat over medium to medium high heat.
Step 5
Add 1/3 of the egg mixture to the pan. Swirl it around to cover the pan. Let it cook over low heat until the top begins to set but is still wet, and the edge is firming up
Step 6
Use a spatula, lift one end of the egg and fold it over the other side.
Step 7
Add 2nd 1/3 of the egg mixture and add cheese( optional)
Step 8
Repeat the process of folding it over from one side to another. If it does not look perfect at this time, it is okay. you can fix it very easily in the next step
Step 9
Add 3nd 1/3 of the egg mixture and repeat the process of folding. Cook over low heat until both sides are well cooked.
Step 10
Remove from the pan and let cool for about 5 minutes.
Step 11
Slice the egg omelet into thick pieces and enjoy!!
