Ingredients
2 servings
4 ouncesribeye
thinly sliced into bite size strips
1carrot
sliced thinly
King oyster mushrooms
1spicy green chili pepper
optional, chopped if using
2green onions
green parts only
1 cupchicken broth
or beef broth or vegetable stock
2 tstoasted sesame oil
1 teaspoongarlic oil
0.5 tskosher salt
0.25 tsground black pepper
1 Tbsoyster sauce
2 tspotato starch
Instructions
Step 1
Cook the rice.
Step 2
Cut the meat, carrot and oyster mushrooms into thin slices. Chop the green onion into small rings.
Step 3
Heat a large skillet over high heat. Drizzle 1 teaspoon of the sesame oil and 1 teaspoon garlic oil into the skillet and add the beef, kosher salt, and ground black pepper. Stir with a wooden spoon for about 2 minutes until 80 percent of the beef is cooked.
Step 4
Add mushrooms, carrot, and green chili pepper and stir for about 2 minutes.
Step 5
Stir in the oyster sauce and the chicken broth/potato starch mixture. Stir everything until it’s soft and smooth. Reduce the heat to low and let it simmer.
Step 6
Put the warm rice on a large platter, or divide your rice into 2 portions on 2 plates. Heat up the sauce over high heat until it’s bubbling and then pour it over top of the rice.
Step 7
Sprinkle with the chopped green onion, drizzle 1 teaspoon toasted sesame oil, and serve right away.
