Instructions
Step 1
Preheat oven to 400.
Step 2
In a medium bowl, toss the Brussels sprouts in the olive oil, season with salt and pepper.
Step 3
Coat a 9x13 pan with cooking spray.
Step 4
Put the Brussels sprouts and bacon in the pan and roast for 12 minutes.
Step 5
Take the pan from oven, stir the bacon and Brussels sprouts, using a spoon make 4 wells in the mixture.
Step 6
Crack an egg into each well. Season with salt, pepper and red pepper flakes. Sprinkle parmesan cheese over mixture and eggs. Cook for 8 minutes or until eggs are cooked to your preference.
