Instructions

Step 1
Preheat oven for 375 degrees.
Step 2
In a skillet, brown the ground beef and drain off the grease.
Step 3
Stir in drained beans, enchilada sauce, tomato sauce, minced onions and 1 cup shredded cheese.
Step 4
Set aside 1 cup of corn chips.
Step 5
Coarsely crush remaining corn chips and mix in with meat mixture.
Step 6
Pour into a 1 1/2 qt casserole dish.
Step 7
Bake, covered at 375 degrees for 30 minutes.
Step 8
Spoon sour cream on top.
Step 9
Sprinkle with 1/2 cups cheese and remaining corn chips around the edge of the dish.
Step 10
Bake uncovered for 2-3 minutes.
