Jamaican Style Curry Chicken

NOTE : I used bone in chicken but this recipe is recommended for boneless chicken thigh or breast
After Adding carrots , bell pepper and potatoes ensure to stir to ensure food doesn't stick to the bottom of pot. If water starts to dry up just add water.
Onions can be added in after you put the chicken in the pot or after you add the water (just depends on your preference)
This can actually be served for maybe 5 people but for a good size meal I think 4.
Green onions is optional just to garnish not required

Ingredients

2.25 lbsBoneless Chicken
organic
1 Tbspfresh ginger
2 ½ TbspAll purpose seasoning
1onion
diced, small or medium size
½ tspallspice
½ tspcayenne pepper
1potato
small or medium size, diced
1jalapeño
sliced, optional
4garlic clove
minced or diced
5 Tbspcurry powder
2 stalkgreen onion

6 Tbspolive oil
4 sprigthyme
1 cupwater
1bell pepper
chopped
1 ½ cuprice
0.25 lbgreen beans
kosher salt
¼ tspblack pepper
Instructions
For Curry Chicken
Step 1
Cut up meat into desired cube size then wash meat in mixing bowl with lime or vinegar under cold water then rinse and dry with paper towel
Step 2
Add 4 Tbsp Curry powder in separate bowl with 2 1/2 Tbsp All purpose seasoning, 1/2 tsp of all spice and 1/2 tsp of cayenne pepper
Step 3
Slice carrot, dice potato and slice up bell pepper put into a separate bowl ( slice jalapeno (optional) if a spicy favor is wanted )
Step 4
Chop or dice a small or medium size onion and put in bowl with chicken
Step 5
Chop or minced 4 clove of garlic
Step 6
Turn on stove to medium heat add 4 tbsp olive oil in a Dutch Oven pot
Step 7
Transfer dried seasoning into mixing bowl with chicken , then add 1 tablespoon of grated fresh ginger and garlic. Make sure to thoroughly mix through
Step 8
When Pot is hot add 1 tbsp of curry powder and stir then add meat that has been mixed with curry powder, dry and fresh seasoning and cover pot
Step 9
After 10 minutes add 1 cup of water and turn meat with a cooking spoon and 4 sprig of thyme
Step 10
Once chicken starts to stew down after 20 to 25 minutes add potato, carrot and bell pepper
Step 11
Turn chicken with spoon every 5 to 10 minutes until finish.
For Green Beans

Heat cast iron or sauté pan on medium fire then add 2 tbsp of olive oil
Step 13
Add green beans and add a pinch of kosher salt and black pepper as needed and constantly turn for 7 to 10 minutes depend on desired crunchiness
