Step 1
1. Preheat oven to 180 degrees
2. Line baking trays with baking paper
3. In a medium bowl, beat your butter and sugar until creamy, add egg and vanilla extract and beat until combined
4. In another bowl, combine your flour and coconut
5. Mix the two mixtures together by hand until combined
6. Scoop out even amounts and roll into balls and place onto the lined tray
7. Using a spoon, create a deep indent into each ball
8. Place the jam inside the indent and place into the oven for 12 minutes
