Ingredients

1 poundmini peppers
assorted
⅔ cuppart skim ricotta cheese
2/3 Lean
⅓ cupreduced fat mozzarella cheese
shredded, 1/3 Lean
4slices turkey bacon
1egg
beaten, with turkey bacon ~ 1 Lean
¼ cupparmesan cheese
freshly grated, 4 Condiments
2 Tbspfresh basil
chopped, 1/4 Condiment
2 Tbspfresh parsley
chopped, 1/2 Condiment
¼ tspsalt
optional, 1 Condiment
⅛ tspblack pepper
1/4 condiment
Instructions
Step 1
1. Preheat oven to 350 degrees.
Step 2
2. Cook turkey bacon and chop into very small pieces. Set aside.
Step 3
3. Cut peppers in half lengthwise, removing seeds and ribs. Place on a baking sheet and set aside.
Step 4
4. In a medium bowl, combine ricotta, mozzarella cheese, turkey bacon, egg, parmesan cheese, basil, parsley, salt and pepper.
Step 5
5. Fill peppers with the cheese mixture.
Step 6
6. Bake for 18 to 20 min or until ricotta is set and cheese is melted.
